I never thought I would complain about too much rain, and it is fab having a lush green garden!! However, these grey cold days are becoming rather tedious. So this week I have a lovely soup recipe for you from Sophie Standing, a nice winter warmer!!
MINT AND COURGETTE SOUP
6 Spring onions
1 Red onion
4 Garlic Cloves
Big bunch of mint
200ml Plain yogurt or Greek yogurt
60gms Grated cheddar or feta.
Salt and Pepper to taste (Sophie likes it very peppery!)
Chop the spring onions, red onion, garlic and courgette up and put in a casserole dish with butter and salt and pepper and sauté until soft and going golden. Add half bunch of finely chopped mint. Stir and cook for 10 mins.
Add the water, milk, yoghurt and grated cheese and cook for 20mins.
Salt and pepper to taste.
Pop in the blender and liquidise. If it’s too thick depending on the size of the courgettes you used then add more milk or water.
